Good dishes to bring to a pot luck bbq?

Laguna sounds like so much fun, can't go so I will instead distract myself with food!
Lacking an O/T area I'll post away here. :D
Civiche brine
On a hot summer day can’t beat a bucket of cold Coronas w lime and a bucket of Civiche w/chips/crackers.
Why be the guy that brings chips or cold pasta salad from the deli.

1 cup lemon juice
1 cup lime juice
1 tablespoon salt
1/2 red onion sliced thin
1/4 bunch cilantro, chopped.
1 lb fish (yellowfin tuna or ahi tuna works great) cut half inch size squares.
1 Anaheim pepper you can add serranos or jalapenos if you like spice
Soak overnight or longer in fridge.
Leche de tigre is the remaining drinkable brine, recipe from Peru.

Try it.

Try the cevichi with scallops and some tomatoes too. :D

Here's my too easy chicken brine.
Chicken brine.

1 chicken separated.
I prefer to bbq legs/thighs only with the skin on.
1/2 gallon water in a large stockpot
1/3 cup salt in stockpot
1/3 cup sugar in stockpot (try brown sugar)
1 lemon juiced into stockpot
1 orange juiced into stockpot
Soak overnight in fridge.
Meet room temp, pat dry.
Sprinkle paprika, pepper, garlic salt on chicken and bbq.

So, got an easy dish to share? :D
If Katie were on here we could get her "911 Rum cake" recipe. 8)

Mike, your pool looks really nice especially right now in this east county heat! I have a drink recipe guaranteed to please at any bbq...

Killer Sangria Recipe

3/4 cup Brandy
1/2 cup Cointreau Orange Liqueur (or Triple Sec, Hiram Walker brand, etc. if tire budget is priority like ours)
4 cups Red Wine
Juice of 3 Lemons
2 oranges cut up
1 lemon cut up
1 cup peaches cut up
pour over ice

Sounds refreshing on a summer day. 8)

Found this with google, was a hit.

The Caribbean Pina Colada.

2 cups coconut milk
3 cups pineapple juice
2 cups crushed pineapple
1/2 cup shredded coconut, sweetened
1 cup rum, preferably golden
1/2 cup sugar
1 teaspoon clear vanilla

Combine all ingredients in a large bowl. Blend in batches using a blender. Serve over ice.
